Only 3 weeks late with my latest weigh-in and extreme diet pulse check! It’s not that I didn’t want to report in unless I’d made progress–although that might be a darn good reason one reason–but I’ve been away on summer vacations–that’s right–more than one vacation! Unless you count a writing conference as work related. But I don’t because it was too much fun to be called work. Don’t tell the IRS.
The heat wave has slowed down my exercise plan, but not stopped it all together if you count swimming ten feet towards a raft before turning around. It was further from shore than it looked at first and I decided not to risk drowning in the name of exercise–in spite of Myren’s unflagging encouragement for me to swim on.
The Late Weigh-In
Today I weighed one whole pound less than I did 4 weeks ago. That’s pretty pathetic for a diet not bad considering the aforementioned vacations.
Now I’m busy eating next to nothing to make up for lost time and Myren, my chauffeur is very grumpy troubled about this. Must be his concern for my health or he’s starving.
In an effort to eat healthy I’m relegated committed to eating healthy foods like this truly yummy recipe. I promised you a recipe and here it is.
The Recipe: Black Bean Tortilla Snack
INGREDIENTS
1 cup fully cooked black beans, drained 1 large or 2 small tomatoes, diced 1 large avocado, diced ¼ cip a purple onion, finely chopped The juice of one lemon 2 Tblsp Finely chopped cilantro Sea salt and black pepper (to taste) Corn Tortillas, deep fried
DIRECTIONS
Mix all ingredients in a bowl.
Serve with fried corn tortillas.
Simple! Even Myren could whip up this dish.
